I have had lots of requests for an easy, filling, portable breakfast-here is my favorite so far:
Banana Oatmeal Breakfast Bites
2 ripe bananas
1/3 cup almond butter (creamy or crunchy)
1/4 cup unsweetened applesauce
2 Tblsp unsweetened milk (soy, almond or skim)
2 Tblsp maple (pancake) syrup (I use sugar free)
1 tsp vanilla
1/4 cup whole wheat flour
1 1/2 cups rolled oats
1 cup quick oats
Preheat oven to 350*
In one bowl mash the bananas with a fork until smooth-the riper the banana the better. Mix in the almond butter, applesauce, milk, syrup and vanilla. In a separate bowl mix dry ingredients together well. Pour the dry ingredients into the banana mixture and mix well (spoon/fork, not with a mixer). Drop spoonfuls on baking sheet lined with parchment paper. Bake at 350* for about 12 min. until slightly browned. Makes about 24.
Nutrition for one bite: 74 cal. 2.6 gr. fat, 0 Chol., 0 salt, 11 gr. carbs, 1.4 gr. fiber, 2.6 gr. sugar, 2.1 gr. protein
These values are great, and the calories so low! 2=snack; 3-4=breakfast!
