A friend asked for some recipes that would fare well in our current (Covid – 19) situation and could employ frozen and canned foods since fresh may become a little harder to come by in the next few months. Here are two of my favorites. Although, we all agree that fresh and frozen are typically our preference when it comes to nutritional values, these days we are doing the best we can with what we have. Be creative, these are just a couple of options! If you love ‘Core Life’ or Panera, these might look a little familiar!

Broth Bowls

–First prepare~

Basic Broth: 

Canned chicken

(Bone) Broth, chicken

Fresh/canned, chopped/diced tomatoes (optional)

Fresh/frozen diced onions (optional)

Fresh/frozen diced peppers (optional)

Minced garlic, or garlic powder

Other seasonings to taste

-Place all in pot and bring to boil, then turn to simmer

–While the broth is simmering, create base of your choice, which could include~

Base for Mexican flare:

Brown Rice/Quinoa, cooked from dry or frozen

Black Beans, canned, rinsed

Corn, canned/frozen, cooked

Base for Americana flare:

Brown Rice/Quinoa, cooked from dry or frozen

Fresh/frozen broccoli, steamed &/or

Fresh/frozen carrots, cooked &/or

Fresh/frozen asparagus, steamed

Then, add~

Topping for Mexican flare:

Taco seasoning

Tablespoon of plain yogurt (or low fat sour cream), optional

Cilantro, optional

**Be creative and put together foods and spices that make your taste buds smile!!
