2lbsspaghetti squash, halved lengthwise and seeded

1medium red onion, thinly sliced
1zucchini, diced
44 medium tomatoes, diced or 1 can diced tomatoes
¼tspsalt
¼tsppepper
½cupreduced fat parmesan cheese

Place the seeded squash halves, cut side down, in a glass baking dish. Add ¼ cup of water and cover with plastic wrap. Microwave on high for 8-10 min. until tender. Cool and then scrap pulp from skin-it will look like spaghetti noodles.Meanwhile, in a skillet, heat the olive oil, add the onion and cook until translucent, med. heat about 3-5 min. add the zucchini and cook 4-5 min longer until it is tender and slightly browned.
